I already try to stay pretty healthy and exercise on a regular basis but after Vegas and the good food I felt crappy. I have no regrets though. All that food was yummy! I've been wanting to have more of a plant base diet or eat more veggies but not go completely vegetarian. I love meat too much to do that. Even though I do exercise, I still eat some crappy things so thought this was a different way of jump starting the lifestyle change and to see if I feel any different. Let's see how this goes!
I have to admit, I was a little unprepared and decided to start last minute. I just woke up on a Thursday and said "I'll start today!" Nothing prepared.
DAY 1
Most of the day wasn't hard at all until later..
My mom came back from visiting the Philippines on day 1 and they decided to get Chinese food from a very good Chinese fast food place for dinner. Kung pao chicken, orange chicken, beef and broccoli, low mein and rice. I seriously thought of giving up and starting over the next day, but I had to talk myself out of it. I realized I can always get that food. That restaurant is most likely going to be there next week. I can wait.
Breakfast
Peanut butter toast with Greek yogurt and granola. Not that exciting.
Snacks and Lunch
Not the healthiest I know LOL but like I said, I was unprepared. Oh and that's frozen cheese pizza.
Dinner
I made veggie whole wheat pasta sautéed in olive oil, red pepper flakes and red wine vinegar. I eat this regularly. I ate this after my work out and also had a protein shake.
DAY 2
I don't feel weak or anything and I'm not starving. But I am concerned about my protein intake. I know I'll have to prepare better for that.
Breakfast
Not the healthiest either but it makes me happy LOL. Coffee, sweet bread and banana.
Snacks and Lunch
Same snacks with left over pasta.
DINNER
I made stir fry tofu using coconut oil for the first time. If you haven't used it before, it has a hint of that coconut taste but it's not strong. I actually like it. I tossed tofu with baby bock choy, mushrooms, spinach, soy sauce, a little sesame oil and lemon juice.

DAY 3
I woke up feeling fine. Not grouchy or headaches or anything.
BREAKFAST
I wasn't really hungry so I had coffee with pandesal and cheese from the Philippines my mom brought back from her trip. I had 3 of these.
LUNCH
Guess that pandesal filled me up! Probably also from the tamarind candy I was snacking on? Anyway, still wasn't that hungry so I decided to make a protein smoothie with frozen fruit, carrots and celery.

DINNER
I'll admit I had a few potato chips before dinner but I also had a banana. I'm probably not doing this right but oh well.. It's an experiment. For dinner I made a light but pretty tasty vegetable lasagna with marinara sauce, zucchini, broccoli, Italian squash, and cauliflower. I wish we had mozzarella but shredded cheddar did it's job.

Oliver and I went to the movies after so we also had popcorn, soda and later a Klondike bar... I know I know.. So bad. I don't drink soda often either but popcorn and soda go together.
DAY 4
I had some left over veggies from last night so I decided to whip up some scrambled eggs with them before church. This is pretty tasty.
BREAKFAST

LUNCH
OK NOW I'm craving meat more. After Church I got hungry but I ate my pasta from day 1. (I'm the only one eating it.) I am surprised that I lasted this long with out "suffering" with meat cravings. Figure I don't have to take a picture of that.
I made a cucumber salad that I'm quite proud of though! I added cherry tomatoes, and sweet corn kernels. You could probably put any vegetable good for salads but this is what I chose. Dressing is only garlic salt with parsley, pepper and red wine vinegar. Simple side or snack! (pats on own back)
DINNER
Thank God for Souplantation. My family knows I'm doing this 'experiment' and we eat there regularly so this all worked out. I get full and very satisfied all the time so it felt like a regular visit, except I didn't eat the chicken noodle soup or clam chowder I love so got the tomato soup instead.
(It's looks like a lot of ranch but it's not. And yes that's a cookie under the yogurt. Tee hee)
DAY 5
2 more days to go! The meat that comes to mind is rotisserie chicken.. I love rotisserie chicken. I know just because you go vegetarian doesn't mean you're always eating healthy...You can see from what I'm eating. I am one of those people who can go on days or have meals with out meat and be fine. Honestly I like carbs more but I know I need the protein.
BREAKFAST
Oatmeal with cinnamon and bananas. The most exciting thing on here right?!
LUNCH
I packed that cucumber salad I made and left over veggie lasagna. The lasagna is actually better the next day...or 2 days for that matter.
HEY I got some protein in! LOL. This was a quick snack in between lunch and dinner.. and a few hours before work out.
DINNER
I got home later than usual after my work out and was lazy to prepare anything so I ate left over lasagna.. again LOL. And I wanted cereal so I ate Raisin Brand... I know, not a good protein dinner and I should drink a protein drink after but I didn't want to. I'm stubborn.
DAY 6
Almost there! But this is really not too torturous for me. It's because of those carbs I love so much. I don't feel too different to be honest. Maybe a little cleaner? I mean little. I'll have to pay attention when I go back to eating meat. I'm pretty sure I could have done this better if I prepared more. Notice all those carbs I ate through out the week?!
BREAKFAST
I'm not hungry at all but I wanted to try that new vanilla macchiato from Starbucks. This is the exciting meal to start the day.
LUNCH & SNACK
Same lunch as yesterday and carrots for snacks. Finally got rid of that lasagna! After work I ate more carbs... left over pasta. I'm getting tired of carbs! Correction: Wheat pasta. It wasn't a lot though. Thought it would give me energy for my work out later.
DINNER
After my work out I had a protein shake. Protein powder, Greek yogurt, water and bananas.
This may be weird to some of you and to others, a good meal. We will eat this for dinner regularly if we didn't prepare anything. But it satisfies us.
Kimchi, fried tofu, and rice. ACTUALLY I didn't eat the rice. I ate dinner before I could take a picture of it so here is tomorrow's lunch with rice.
DAY 7
My last day! I'll be eating that rotisserie chicken in no time! Or orange chicken.. or steak..

I cooked breakfast the night before. I made that scramble from day 4 but added spinach in it and a piece of wheat toast.

I made the same protein shake from yesterday but put peanut butter in it. You got to try this!

Gas much? LOL. I know that's what it looks like but it wasn't a problem! I didn't want any "bad" carbs for dinner. So this is what I had. Fat free refried beans with broccoli and squash.
LEARNING EXPERIENCE
After doing this, a few things became more clear to me. 1) I eat too many carbs. 2) I am not a big meat person even though I like meat.
I got to say I realized after getting use to being a vegetarian for a week, I didn't have to think about what to eat. It was easy for me. But I could have been more prepared, did things differently and I'm pretty sure I did a few things wrong. THIS IS GOOD! It's a learning experience. It helped me realize I need to balance my meals more. Especially those delicious carbs. I knew before I did this I ate a lot of carbs, but this really made me pay attention to how much. Especially in the beginning of this week! I definitely need more protein with veggies. This definitely inspires me to try low carb but not completely cut out carbs.
